Sheet pan dinners make your life so easy, and this recipe, in particular, has only 10 minutes of prep time. Sweet potatoes and apples are particularly satisfying flavors in the fall, but are fortunately available and affordable at the grocery store all year long.

Ingredients

Directions

  1. Arrange chicken, sweet potatoes and apples on an oiled sheet tray.
  2. Drizzle with 3 tablespoons of olive oil and then season with sage, salt and black pepper.
  3. Bake in a preheated 350°F oven for 15 minutes.
  4. Remove the sheet tray from the oven, push the chicken and vegetables to the side and add the kale.
  5. Drizzle the kale with the remaining 1 tablespoon of olive oil and return the tray to the oven.
  6. Bake for another 20 minutes, until the chicken is done, vegetables are tender and kale is crispy.
  7. The chicken is done when a meat thermometer inserted in the center reaches 165°F.
