- In a large clear bowl, mix in pepper, coriander, roasted cumin, cardamom, turmeric, sumac, cloves, salt, and cooking oil.
- Coat the boneless chicken thighs .
- Roll the chicken pieces in foil paper.
- Steam the chicken for 15 minutes on low simmer.
- While steaming the chicken, prepare garlic sauce by mixing plain yogurt with mayonnaise, sriracha, cloves, lime zest, and lime juice.
- Mix the sauce well and set aside.
- Unwrap the foil paper and cut the steamed chicken pieces and transfer it to a pan with cooking oil.
- Fry the chicken for 2 to 3 minutes.
- Take a pita bread and spread a generous amount of garlic bread .
- Add slices of tomatoes, cucumbers, red onions, and fresh cilantro.
