This balushahi recipe gives you the perfect halwai-style badusha sweet that is crispy on the outside with melt in the mouth, soft and flaky interior.

  1. In a bowl take flour, pinch of salt, baking powder & ghee and mix everything very well. Add water gradually and make a hard dough. Do not over-knead the dough. Then separate the dough with hands and combine again. Repeat the process for 6 to 7 times to make fluffy. Then cut into half and place one over another. Do this for 3 to 4 times to make more layers in Balushahi. Keep in rest for 5 minutes.
  2. In a pan take sugar, cardamom and one cup of water. Bring it to boil. Boil for 5 to 7 minutes on low-medium flame. Then turn the flame off and add some lemon juice. Keep it aside.
  3. Now cut the dough into small pieces. Take a dough piece and make round & flat shape. Make a hole inside the ball like Balushahi shape. Fry them in oil on very low flame. Fry both sides till brown in color. Fry them very patiently. Do not turn the flame high. One batch can take 13 to 15 minutes to be fried. Then take out of the pan and keep on a tissue paper to absorb excess oil.
  4. Now add them in the sugar syrup. The syrup should be a bit warm. Keep & turn them for 5 to 7 minutes. Then take them out. Now you can serve them or you can coat them with mawa or milk powder.
