- Cut the whites and transfer to a bowl.
- Mix the chopped boiled white eggs with red chili, salt, garlic, ginger, curry leaves, green chili, flour, breadcrumbs, and raw egg white.
- Add garam masala and give it one last mix.
- Create small spherical shapes and deep fry until light golden brown.
- In a separate pan, drizzle a bit of cooking oil and add chopped garlic, red chili, curry leaves, and ketchup.
- Stir for 2-3 minutes then add the deep-fried eggs.
- Garnish with fresh green chili and chopped coriander .
