If you’re missing Panera Bread’s old fontina grilled cheese, we’ve found a way to recreate the ooey-gooey sandwich from home. All you need is three cheeses, some butter and mayonnaise to ensure the bread crisps up just right. When it's done, dunk the sandwich in some Panera copycat broccoli cheddar soup.

  1. Sandwich the slices of cheese between 2 slices of bread.
  2. Preheat a skillet, and melt 1 tablespoon butter over medium-low heat.
  3. Spread or brush the outside of the sandwich with 1 tablespoon mayo and cook until light golden brown, about 4-6 minutes.
  4. Flip the sandwich, (add more butter to the pan if needed) and cook the other side until brown and the cheese is melted, another 4-6 minutes.
  5. You can press down on the sandwich gently so it will brown evenly, but don’t smash it.
