Pickle / Achar is an emotion to most people.You can have it in breakfast, lunch and dinner too.If you have some pickle / achar in your platter, you don’t need anything else.There are different kind of pickles / achar like mango pickle, lemon pickle, chili pickle, mixed pickle. Among them my most favorite is mango pickle. It goes really well with paratha, puris, rice, roti anything… I love having mango pickle with plain rice.

  1. Wash mango and drain. Then peel off and cut into slices. Take them in a bowl. Add salt & turmeric powder and mix very well with your hand. Keep it aside.
  2. Now in a fry pan take 1 tsp panch foron (special five spices mix), 4 dried red chilies, 1/2 tsp cumin, 1/2 tsp coriander and 1/2 tsp mustard and roast on medium heat till brown. Then take them out, grind and keep aside.
  3. Heat oil in a pan. Add red chili, bay leaves and whole mustard. Fry for a while. When they start bubbling add mangoes and stir to mix well. Cook for 2-5 minutes. Add ginger-garlic pastes this time. Cook for another 5 minutes. Add half of the ground spice powder, sugar and salt if required. Mix and cook on medium low heat.
  4. When mangoes are perfectly boiled add vinegar. Mix and cook for 5 minutes more. Then sprinkle the remaining spice mixture and mix well. When it starts releasing oil turn the flame off. Let it cool completely. Then store in a dry glass jar. You can store it for 2 months in normal temperature. You can store this in refrigerator as well for about six months. Enjoy this pickle with your favorite food items.
