Thai Meatball Lettuce Warps

Baked meatballs, made with lean chicken or turkey and seasoned with traditional Thai flavors, make a light and tasty appetizer when wrapped in fresh greens.

  1. In a large bowl, mix first 11 ingredients with a large spoon until combined. With wet hands, shape into 24 (1-inch) balls. Refrigerate 1 hour to firm up.
  2. Heat oven to 350 degrees F. Coat a baking sheet with cooking spray and arrange meatballs evenly on sheet. Lightly coat meatballs with cooking spray. Bake 15 to 20 minutes or until meatballs are lightly browned and cooked through. (Meatballs can be made ahead, covered with plastic wrap, and refrigerated. Reheat in a 350 degree F oven.)
  3. To serve, place a meatball into a lettuce leaf. Drizzle with sweet red chili sauce and top with cucumber and mint leaves.
